Ardent Mills rolls out keto-friendly flour blend

The supplier has introduced what it calls an industry first, a keto-certified, low net carb flour for baking products.

Ardent Mills has unveiled a new flour blend for products that fit keto and low-carbohydrate diets.

The flour and ingredients producer based in Denver works with store brand manufacturers and said the launch of its Keto Certified Net Carb Flour Blend is an industry first for net carb flour blends for keto and low net carb baked applications. The formulation can be used as a replacement for conventional flour for bread and baked goods and is non-GMO, dairy-free, vegan, has no-added sugar and is a good source of fiber.

The company also just recently acquired a chickpea supplier to broaden its business.

"Interest in a low-carbohydrate lifestyle continues to grow as consumers seek solutions that match their personal health values and preferences. And although this market is a great opportunity, it’s also a challenging environment for manufacturers,” said Ken Rudd, director of innovation, Ardent Mills. “Our Net Carb Flour Blend provides bakers with uncompromised formulations for keto and low net carb applications.” 

Ardent Mills said the blend is also nut-free and contains gluten and which allows its clients to run on their current equipment without any changes. The blends come in white, all-purpose flour and specialized flour blends. The company offers customers a bake-lab consultation and pilot test to help with ideating, formulating, scaling and commercialization issues.
